RAINBOW SALAD

Healthy and full of vitamin C salad for the summer period.

RAINBOW SALAD

Ingredients:
  • 350 gr bok choy
  • 350 gr red cabbage
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 1 carrot
  • 3 leeks
  • 2 tbsp sunflower seeds
  • 5 tbsp tahini
  • 2 garlic cloves
  • 1/2 lemon
  • 1/2 tsp fresh coriander
  • 1/2 tsp cumin
Instructions:

1.Wash and cut the vegetables.Combine the bok choy,red cabbage,peppers,carrot,leeks and sunflower seeds in a large bowl.2.Beat together the tahini,lemon juce,little bit of olive oil and 2 tbsp of water in a bowl.3.Chop the coriander and garlic and add to the tahini sauce and mix.4.Add the sauce to the salad,season with salt and pepper and serve.
