EGG MUFFIN CUPS

12 whole eggs
1 red bell pepper
1 green onion
80 gr. cherry tomatoes
1 handful spinach
50 gr. grated mozzarella cheese
salt and pepper
1.Dice the onion,pepper and cherry tomatoes.2.Beat the eggs in a large bowl.3.Grease a muffin pan with some oil or butter and place some spinach into each muffin cup.4.Divide the diced vegetables equally in each cup.5.Sprinkle each cup with grated mozzarella.Pour the egg mixture into each cup.6.Season with some salt and pepper.7.Bake them for 15 min at 200C degrees.Serve and enjoy!
