  • 2 fresh leeks
  • 2 garlic cloves
  • 1 tbsp dried oregano
  • 100 gr raw spinach
  • 6 whole eggs
  • 15 gr fresh parsley
  • 80 ml extra virgin olive oil
  • 50 gr feta cheese
  • 30 gr cedar nuts

1.Preheat a pan with the olive oil in it.Dice the leeks and garlic and add them to the pan.Add the oregano.Cook for about 15 min.Add the spinach and stir.Season with some salt and pepper and remove from the pan.2.Beat the eggs with the parsley and 1 tbsp of water in a bowl.Pour some olive oil in a pan on a medium heat.Pour half of the egg mixture in the pan,cover and cook for about 2 min. 3.Pour half of the veggies on the cooked omelet and sprinkle with some crumbled feta cheese.Repeat these steps for the other omelet.4.Serve and enjoy!
