  • 2 tbsp (30 ml) extra virgin olive oil
  • 1 small onion
  • 3 garlic cloves
  • 900gr. fresh red tomatoes
  • 1/2 tsp paprika powder
  • 1 tbsp brown sugar
  • 1 tbsp dried thyme
  • 4 whole wheat or plain bread slices (crustless)
  • 350 ml chicken broth
  • 1 tbsp (15 ml) balsamic vinegar
  • 1/2 tsp black pepper

1.Peel and cut the tomatoes.2.Preheat a large pot with the olive oil in it and add diced onion and garlic.Cook them for about 5 min.3.Add the tomatoes,thyme,black pepper,bread slices and brown sugar to the pot.Cook for 3 min.4.With a hand blender,make the soup into puree.5.Add the chicken broth and simmer for 10 min.6.The last 2 min.,add the balsamic vinegar and stir.7.Serve into bowls and enjoy!You can drizzle a little bit of olive oil on the top of each serving and top with some green veggies.
