Really tasty,high in protein,vegetatian and easy meal.
1 cup raw quinoa
2 cups water
1tbsp wine vinegar
2 tbsp olive oil
5gr fresh thyme
1/2tsp black pepper
Pour the water in a small pot and leave it to boil.After it's become to boiling,add the quinoa,reduce the heat and simmer for 10-12min or until all of the water is absorbed.
Cut the vegetables and steam them in a microwave or in a small pot.
Make the vinaigrette:in a small bowl,pour the vinegar,olive oil and add the thyme.Mix well.
This recipe is for 4 portions.Put 1/4 of the cooked quinoa in one portion.Place some of the steamed vegetables on top and toss with little bit of the vinaigrette.
