One different recipe for loaded potatoes.You can eat them as a starter or just a basic meal for lunch and dinner.Use any seasonings that you like to season them.Enjoy!

  • 3 tbsp extra virgin olive oil
  • 3 medium size sweet potatoes
  • 1 fresh avocado
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup lentils (uncooked)
  • 100 gr. goat cheese
  • 30 gr. fresh coriander
  • 15 gr. red hot chili pepper
  • 1/2 fresh lemon

1.Preheat the oven to 200C degrees.2.Place a baking paper on a baking sheet and grease with some oil or butter.Place the potatoes on the sheet and make holes in them with a fork.3.Bake them for about 45 min or until they are soft.4.In the meantime,mash the peeled avocado in a bowl and season with some salt and pepper.5.Boil the lentils and drain the excess water.You can you use canned lentils if you want.Mix the boiled lentils with the avocado.6.Remove the baked potatoes from the oven and leave them to cool down for 10 min.Cut them lengthwise and with a spoon,scoop out some of the inner part of them. 7.Toss each potato with a little bit of olive oil.After this fill each one with the mixture of avocado and lentils.8.Sprinkle with some crumbled goat cheese or any cheese you want,some fresh coriander,chili peppers and lemon juice on the top of each one.9.Serve warm and enjoy!
