EGG IN TOMATO

4 fresh red tomatoes
40 gr. green pesto
4 whole eggs
200 gr. brown rice (cooked)
1.Cut the top of each tomato.Scoop out the inner part and sprinkle with some salt.Leave them for a while.2.Preheat the oven to 180C degrees.3.Fill each tomato with the brown rice and top with some pesto.4.Make something like a nest on the top in each one for the eggs.5.Crack one egg in each tomato.6.Bake them for about 20 min.7.Serve immediately with a sprinkle of black or red pepper.
