CARROT CREAM SOUP

2 tsp extra virgin olive oil
1 tsp cury powder
1 garlic clove
10 gr. fresh ginger root
220 gr. fresh carrots
700 ml. vegetable broth
1/4 cup fresh coconut milk
1.Pour the extra virgin olive oil with the cury powder,crushed ginnger root,diced carrots and half of the vegetable broth in a large pot on a high heat.2.Leave it to boil,and after boiling,reduce the heat and simmer for 15-20 min until all of the vegetables are soft.After that add the other half of the vegetable broth.3.After the vegetables are soft,remove the pot from the heat a leave the soup to cool down for a while.After cooling down,pour it in a blender or food processor and blend until the consistency is like a puree.You can use a hand blender if you want too.4.Return the purre back to the pot on a medium heat,add the fresh coconut milk and stir everything.5.Serve the soup warm with a sprinkle of black pepper on the top.6.Enjoy!
