Classic and delicious,healthy recipe!
4 bell peppers
1 head onion (cut)
2 garlic cloves
1 tbsp chili powder
100 gr. brown rice uncooked
1 cup vegetable or chicken broth
400 gr. canned tomato juice
100 gr. grated parmesan or cheddar cheese
pinch of black pepper
1 beaten egg
300 gr. minced beef
Preheat the oven to 200C degrees.
Cut the onion and crush the garlic.
Cut the top from the peppers and remove the seeds.
In a pot or large pan,sautee the onion,garlic and chili powder for 5 min.After that add the rice,stir and sautee for other 2-3 min.
After this add the stock to the pan,wait to boil,reduce the heat and simmer for 10 minutes.After this,remove from the heat and let it cool.
Add 1 cup from the tomato puree,the parmesan or cheddar and the other seasonings to the pan and stir well.Тhis will be the stuffing for the peppers.
Fill each pepper with the stuffing and place in a baking dish.Pour on it the other part of the tomato puree,cover with aluminium foil and baked for 45 min.When it is baked remove the foil and grate little bit of cheese on the top of each pepper and put it back in the oven until cheese is melted.
